Description
Savello di Roma is an ancient cheese that originated in the Roman countryside. This traditional cheese has a mild taste with the rich flavor of sheep milk. It is cured with salt and aged over 60 days in natural grottos on Beachwood planks. The sheep that produce the milk for this cheese are from an ancient and traditional Mediterranean stock – Comisana and Sopravissana. They live in the open air and graze the perfumed grasses of Roman pastures, which produces a lush and tasty milk that creates the flavor of the Savello di Roma cheese.

The cheese was good, but it looked like the rind was removed and there were some other spots. Not sure if mold was cut off.
